What can I eat for breakfast?  I have no time!

As you know, or don’t know but soon will know, I’m all about brain power! My husband has so much of it that I am constantly trying to catch up with him anyway I can; this breakfast is one of my sneaky ways to be spot on in the morning.

What I love about Chia is that although it’s not a superfood, it certainly powers me up with about 9 grams of fat. One of those grams is saturated, one is monounsaturated and the seven other are PUFA. (Omega-3 and Omega-6) it also has 12 grams of carbs with 11 of those grams being fiber, yes! I’m clapping my hands with happiness here -- 12 grams of fiber!!! It also contains, 5 grams of protein. I’m winning so far just by eating an ounce of chia! That’s a lot of fiber considering that an apple is about 4.4-5 depending on the size or you could eat 10 cups of leafy spinach, 2 cups of broccoli, 3 cups of carrots, and 4 cups of cooked zucchini (combined) now that’s a lot of fiber. Remember that I aim to eat about 35-40 grams of fiber per day and so should you if you are a woman in her 40s! I also want to mention that eating chia is not going to be your solution for a do-all-be-all food, meaning you don’t want to eat chia thinking that it will be your “protein” for your meal. We also need protein in each meal, I aim for about 15-25 grams of protein per meal depending on several factors. (monthly cycle, energy, which meal)!

Enough about chia… more about the recipe! I eat this about three times a week.


Vanilla Chia Seed Pudding

INGREDIENTS:

13.5 oz can organic full fat coconut milk
2 Tbsp local organic honey
1 tsp organic bourbon vanilla
1/4 tsp cinnamon
1/4 cup chia seeds

 

INSTRUCTIONS:

1. Combine coconut milk, honey, vanilla, cinnamon and chia seeds in a mason jar or blender of your choice!
2. Seal and shake vigorously or  hit blend.
3. Add chia seeds and shake again, like you did last summer.
4. Place in the refrigerator and wait about 30 minutes for them to set up. You can make several at a time the night before for you and your kids!

Some days I add other ingredients… not all at the same time but I do make fun combos! Try them out according what you like.

1 tbsp of cacao nibs
1 tbsp of powdered cacao
1 tbsp of goji berries
2 tbsp cashews½ cup frozen cherries or other berrie
